Homemade Pita Bread
We love pita bread at our house, but I'm often disappointed by store bought varieties. Sometimes they're soft and yummy and sometimes they're stiff and taste like cardboard. I decided to make my own and I'm so glad I did! They do take time to rise, but they're totally worth it! They even make a pouch when you cut them in half. I was so proud of them. If you use whole wheat flour add a bit of vital wheat gluten to the dough to help them stay soft.
Homemade Pita Bread
1 c hot water
2 tsp yeast
2 1/2 - 3 c flour
2 tsp salt
1 T olive oil
Mix the water and yeast together in the bowl of a stand mixer or large bowl, and let rest for a few minutes until the yeast is dissolved.
Add 2 1/2 cups of the flour, salt, and olive oil. If using a stand mixer knead for 8 minutes on medium using your dough hook, adding more flour until you have a smooth dough. If using your hands sprinkle a little of the extra flour onto your counter or cutting board and knead the dough by hand for about 5-7 minutes, until the dough is smooth and elastic adding more flour if needing to keep the dough from being too sticky.
Spray a clean bowl with cooking spray or rub it with oil and set the dough inside turning to coat all sides. Cover with a clean damp dishcloth and let rise until double. Gently deflate the dough and turn it out onto a lightly floured work surface. Divide the dough into 8 pieces and using a floured rolling pin, roll each piece into a circle about 8 inches wide.
Cook on a hot skillet rubbed with oil for about 30 seconds to 1 minute on one side, then flip. Cook 1-2 minutes on the second side then flip back to the first side for another minute until they look done. Serve warm or at room temperature.

German Pancakes & Buttermilk Maple Syrup for a Crowd
Sunday mornings can be quite crazy around here! Besides me and Eric and my three kids, we also often have Eric's four boys on the weekends along with my sister's three kids who I babysit full time (including most Sundays). Cold cereal can be expensive for a crowd that large. How the heck did I end up with 10 kids??? German Pancakes are a quick and inexpensive breakfast (or even dinner!). I like to pair it with fruit, like grapes or bananas and yogurt on the side. German Pancakes are fabulous with regular syrup or jam, but I usually make a delightful homemade syrup when making them, just for fun!
German Pancakes for a Crowd
1/4 c. butter or margarine
12 eggs
2 c. milk
2 c. flour
Turn the oven on to 400. Place the butter in a 4.8 qt (bigger than a 9x13 pan) baking pan and place in the preheating oven. Meanwhile mix the remaining ingredients in your blender. It will be FULL, but it will fit. I usually start with only 1 cup of milk with the eggs and flour, mix it really well in the blender and then add the last cup of milk and mix it on low just until blended.
Move the pan around to even coat with melted butter, pour the blended mixture on top of the butter and bake at 400 for 18-20 minutes until done. That's all there is to it! Cut into squares and serve.
Buttermilk Maple Syrup
Boil together for a few minutes in a med-large saucepan:
1 1/2 c. sugar
1 c. buttermilk
1/2 c. butter
2 TBSP molasses
dash salt
Remove from heat and add:
1 tsp baking soda
1/2 tsp maple flavoring
2 tsp vanilla
Mixture will foam up at first, but will settle as it cools. Serve warm or at room temperature. Store leftovers in the fridge. Will stay good for a week or so.

Cheddar Jalapeno Rolls
I have this weird love for bread dough, not in the Mmmm... I want to eat it all day sense, but I am fascinated by it. How can you take just a few ingredients, mix them together and have something as versatile as bread dough happen? Once you master a basic bread dough you can make sandwich bread, dinner rolls, sweet rolls, savory rolls, hamburger buns, hot dog buns, bagels, pretzels, pizza crust, bread sticks, etc, etc... Bread dough is amazing! I make homemade bread products at least once a week and usually more often! I like to make a big batch and make different things from it. A loaf of french bread one day and monkey bread the next... crescent rolls one day and jalapeno rolls the next! It's incredible! Now that I've spewed my love for bread dough all over your existence I will get to the recipe. These cheddar jalapeno rolls are great! They work for any meal of the day or even snacks. My husband thinks I need to mass produce them.
Roll Dough
2 c. warm water
2/3 c. powdered milk powder
2 TBSP yeast
1/4 c. sugar
2 tsp salt
1/2 c. butter, melted
2 c. flour
3-5 c. flour
In your Bosch or KitchenAid mixer (with a dough hook) mix everything except the 3-5 c. flour for 2 minutes on medium speed. Add 2 more cups of flour and mix 2 minutes. Turn your speed to low and continue to add flour while mixing on low, half a cup at a time until the dough starts to pull away from the sides into a ball and a very soft (almost sticky, but not quite) dough is formed.
Once you hit that point, mix on medium for 2 more minutes. Cover and let rise in a greased bowl until doubled. Punch down and divide dough in half.
Roll half the dough out into a decent sized rectangle, like you would with cinnamon rolls (about 11" x 14"). Spread with 8oz of softened cream cheese. Sprinkle with diced jarred jalapenos. Drizzle a little jalapeno juice on the cream cheese for good measure and spread it around with a rubber spatula. Top with shredded cheddar and roll up starting on the long side, making a long skinny roll. Cut into 12 slices and place on a greased baking stone or cookie sheet. Cover and let rise. Bake at 375 for 15-20 minutes until done. Brush with butter.
You COULD cut the recipe in half and only make enough for the 12 rolls or you could use the other half for cinnamon rolls or something totally different like pizza crust. After the dough rises the first time you can cover it and put it in the fridge overnight and use it the next day. Hooray! Homemade bread something or another two days in a row!

Homemade Crescent Rolls
I've been making a lot of homemade breads since I got a Bosch mixer last fall... It's an old mixer, but it was free! Wahoo! My bread-making skills have improved a million times since I no longer have to knead and mix the dough by hand. A few months ago I decided to make a conscious effort to stop buying "convenience foods". I try to avoid the frozen aisles all together and have tried to make even more things from scratch than I did before.
It's been great! We're eating better and I'm saving money! One thing I used to always have on hand was refrigerated crescent roll dough. I used it in all sorts of yummy foods... everything from appetizers to main dishes to desserts. I haven't bought them for a while which means I haven't made any of my crescent roll dough recipes.
Crescent Rolls
2 c. warm water
2/3 c. powdered milk
2 TBSP yeast
1/4 c. sugar
2 tsp salt
1/2 c. butter, melted
egg
2 c. flour
3-5 c. flour
In your Bosch or KitchenAid mixer (with a dough hook) mix everything except the 3-5 c. flour for 2 minutes on medium speed. Add 2 more cups of flour and mix 2 minutes. Turn your speed to low and continue to add flour while mixing on low, half a cup at a time until the dough starts to pull away from the sides into a ball and a very soft (almost sticky, but not quite) dough is formed. Once you hit that point, mix on medium for 2 more minutes.
Cover and let rise in a greased bowl until doubled. Punch down and divide dough in half. Roll dough into a circle. Use a knife or pizza cutter to cut the dough into 16 wedges.
To make crescent rolls: Roll each triangle up and place on greased cookie sheet or baking stone with the small pointy end down. Cover and let rise until double (or so). Bake at 375 for 15-18 minutes or until beautifully golden. Brush with melted butter after 10 minutes of baking and again as soon as you pull them out of the oven. These rolls are incredibly amazing!
The beautiful pink filling you see is a package of cream cheese mixed with a small container of "cranberry salad" I found close-dated at Smiths for .39 and cooked, diced turkey. It was pretty much amazing! It was like dessert and dinner in one! Other filling ideas are:
-taco meat & shredded cheese, serve with salsa and sour cream
-cooked chicken & broccoli in cream of chicken soup
-leftover turkey in mayo with dried cranberries and slivered almonds

Old Fashioned Family Dinner Tablescape w/Roll Recipe
Homemade Dinner Rolls
4 1/2 - 5 1/2 c. white flour
1/4 c. sugar
1 T yeast
1 1/2 tsp salt
1 c. milk (I used skim)
1/2 c. water
1 T butter
2 eggs
Combine 2 cups flour, sugar, yeast and salt. Heat the milk, water and butter to warm. Add to dry ingredients. Beat on medium speed for 3 minutes. Add 2 eggs and beat on high for 2 minutes. Stir in enough remaining flour to make a soft dough.
Turn onto a floured counter or cutting board and knead for 6-8 minutes. Place in a greased bowl, turning once to grease the top of the dough. Cover and let rise until double. Punch dough down. Turn onto floured surface. Divide into 24 balls of dough and place in 2 greased 9x13 pans. Cover with a clean dish towel and let rise until double. Bake at 375 for 10-15 minutes or until golden brown. Brush with melted butter while still hot.
Cherry Jam has quickly become a favorite at our house! I've made several batches this summer!
The crockpot dinner was a medley of ham, red skinned potatoes. baby carrots and corn in a broth of water and bacon salt.

WWII Cake
I used to make this a lot, but I realized I hadn't made it for a couple of years and decided it was time again! It's so delightful! You can use muffin pans, loaf pans or a cake pan. The cake is great leftover and it's even good for breakfast!
WWII Cake
1 c. dried fruit (I use a mix of dried cherries, cranberries, blueberries & raisins)
1 1/2 c. cold water
Put raisins and/or dried fruit into a pot with the water. Bring to a boil. Cover and simmer for 10 minutes. Keep covered and cool for 30 minutes or so.
Meanwhile, in a small bowl, mix:
1 1/2 c whole wheat flour
2 tsp baking powder
1 1/2 tsp soda
1/2 tsp allspice
1 tsp cinnamon
1 tsp nutmeg
1 c. walnuts (if desired)
Set aside. In a large bowl, mix:
1 egg
1 c. brown sugar
1/2 c. margarine, melted
Add the raisin mixture and the flour mixture. Pour into greased pan(s). Bake at 350 for 30 minutes, or until a toothpick inserted in comes out clean. Let cool before removing from pan.

Delish Dinner Rolls
I've never had a lot of luck making yeast rolls or breads. They always come out heavier than I would like. BUT I made rolls last week and they were fabulous! The recipe was simple, but time consuming as all yeast recipes tend to be. I can't wait to make these again! I served them for dinner with a brown sugar glazed ham roast, cheesy mashed potatoes and a green salad with homemade dressing. It was a delightful meal! I think I may add more sugar next time to go for a sweet taste like the Texas Roadhouse or Golden Corral.

Crystal Hot Springs Camping Trip & Campfire Cinnamon Biscuits
I've had a couple dozen people ask me where we went camping... We went to the Crystal Hot Springs in Honeyville, UT. We were looking for a vacation spot that was close and cheap and it was both! It was about an hour and a half drive from Utah County and driving there and back, including a side trip to Logan one day only used half a tank of gas ($25). They had a 10% off camping coupon on their website, so a camping spot for three days came to $40. Even with the swimming which was $12/family on Monday night and $6/adults, $4.50/kids for a day pass regular price it was a very inexpensive vacation.
I thought I'd share a few camping pics, a review of the hot springs and a yummy campfire recipe with you! Why not? Sounds like a plan :)

These monkeys were SOOO excited to go on vacation! The drive was uneventful. I'm so glad my kiddos are older now. Car rides aren't a big deal anymore.
Once you get off the freeway there are plenty of signs to direct you to the hot springs.
When we arrived at the Crystal Hot Springs, the staff ignored us for a bit as they carried on a conversation about an upcoming event they had going on. Then they asked my opinion, and I of course had one. I had already read about the event on facebook and had thought about attending it, but it seems they didn't have enough interest to carry it out the way they had wanted. (I think it could have been advertised better.) I was half-tempted to offer to host the thing for them to get them a turn-out (just because I wanted Nina to join in LOL), but I held my tongue. We all know how much I LOVE hosting and promoting events, but an hour and a half away is a bit far for me to volunteer. Maybe I should have offered my facebook services for a free night of camping? haha
The staff was super friendly and laid back and our spot was reserved just as we had planned. I was a little disappointed that we were out on the edge of the campground and not on the pretty, grassy side by the restrooms. I'm not quite sure why the RV people need huge grassy areas and bathrooms with showers when the tent folks have dirt and port-a-potties. You'd think it would be the other way around. The weather was a bit blah our first day, but after eating a picnic lunch, we set up camp. We had an early dinner of chicken salad sandwiches and then took advantage of the $12 per family Monday night swimming. The warm pool looked a little scary, but it felt super good! The minerals are crazy strong though so be prepared to drink LOTS of water and lotion A LOT afterward. They suck the moisture right out of you.
We thought it was so cool to have geese in our camp spot... Ummm yeah... turns out they were evil! The first night we were there they got into EVERYTHING that wasn't in a hard plastic container... they spread stuff all over and made a huge mess!
Look at these hot dog buns! They pecked each one!!! They didn't even eat them... just pecked them! How many of you can say you had your buns pecked by a goose while camping? *grin*
Our second day camping we drove the 30 minutes to Logan. We were hoping to hit our favorite discount store, but alas... it had closed down *pout*. We still went to the Pepperidge Farm factory and bought fishy crackers in bulk for cheap (we won't discuss how a can of Coke spilled into a 3lb bag and I had to throw them away). We also went to the Gossner Dairy and bought flavored milks. If you've ever lived in Logan, Utah you're most likely familiar with these milks... they're shelf stable 8oz boxes of milk in flavors like root beer, cookies & cream, mango (my fave), orange cream and more. They come in 2% and fat free. We used to go up to Logan once a summer and buy enough to last the year. Logan is the first place I lived when I moved away from home, so we've been enjoying Gossner's for a long time :)
That night we had hobo dinners! MMmmm!
Wednesday we bought all day swim passes and spent most of the day in and next to the pool. Check out my crazy farmer's tan! I got big time burned Saturday at our yard sale and got heat exhaustion in the process... it was not a good thing! I was hoping to even out my tan while swimming, but I sunblocked so dang much I didn't get much darker on the white areas. I'm a big fan of sunblock and pale skin... I hate how dark I'm getting this summer! I also hate farmer's tans while wearing a swimsuit! LOL
There are three pools at the Crystal Hot Springs, and some hot tubs as well. The hot tubs were WAY too hot for me, even when it was cold out. They were uncomfortable hot. The soaking pool was pretty warm itself. I was ok in it in the evening, but during the sunshiny day it was a bit too warm, even in the shade. There are two cooler pools though, including an Olympic size pool. Whenever I'd start to feel overheated (remember I was still getting over heat exhaustion) I'd dip in the cooler pool.
My sister are I are people watchers and although the crowds were small (hooray!) we still had plenty of people to watch and make up stories for. You can't people watch without giving people nicknames and back stories :)
The water was so relaxing, my nephew fell asleep right in the pool!
Ignore my legs, but look at that sucker! They sell them in the office for .50. They're pina colada flavored and quite delicious! The oval shape is perfect to suck on too! We tried other flavors as well, but this was the winner!
Wednesday evening the winds kicked up like you wouldn't believe! The tents were collapsing and our stuff was blowing everywhere! It was insane! We were tempted to go home, but I went and talked to the guys in the office. You can see behind this tree where my adorable son is posing that the tent spots were right by a giant empty field. The wind was flying through the field and blowing us away! I went in and asked if we could be moved to the pretty grassy RV side where the wind wasn't so bad. The first guy I talked to said no and I was debating on getting ornery or just packing up and heading home a night early, but then one of the other guys who we had talked to several times stepped in and put us right in the spot we wanted. He gave great customer service! We had to haul all of our stuff (including two tents full of bedding) across the campground, but we set up in a nice grassy area.
This has absolutely nothing to do with my story at this point, but I felt we needed a food break. How yummy do these smores look??? Giant marshmallows and peanut butter cups! Yes, we know how to eat when we camp! Anyways, back to the story.
The RV spots are SOOO much better than the camp spots. Ask for them when you go! They are $10 more and are for "RVs only", but pout and beg so you can stay on the night pretty, non-windy grass next to the good bathrooms. We got POURED on with rain on the last night, but at least the wind was gone! We cooked polish dogs and beans on the camp stove since everything was too wet for a fire and we ate in the tent.
We had to clean up camp in between crazy hail, rain and bits of sunshine, but we did it! It was such a fun week! The weather was horrible, but I'd totally camp there again sometime! Everyone was friendly and it's a great location. We had such an awesome family bonding time. I love my kiddos so much! Now we're trying to wash tons and tons of wet blankets (we don't own sleeping bags), clean our house since all our gear just got dropped on the floor, dry out our tent and recover from the trip. ZZzzzz Hooray for camping!
I'd feel very guilty if I didn't post a recipe after abandoning my blog for so long (isn't it funny how two weeks is so long?), so here it is!

Campfire Cinnamon Biscuits
Place butter, cinnamon and sugar into a metal pie plate. I saved my pie tin from the last time I had a frozen pie. I don't measure ingredients while camping... I'd say it was about 2-3 TBSP of butter though.
Cover with tin foil and melt butter over hot coals. (I am not a fan of these built in grates over the fire pits.... it was very hard to cook.)
Once the butter is melted, add a can of refrigerated biscuits over the butter. Spray your tinfoil with cooking spray and recover the pan. Cook over hot coals for around 15 minutes turning over half-way through. If you tinfoil is on the pan nice and tight, you won't have a problem flipping the pan over.
Here is what they look like when they're done! We made these two different nights and they were gone in two minutes! Next time I will bring two pie plates so I can make double batches!
Invert onto a plate and wa-la! You're done! MMmmmm
Here was our camping menu:
lunch- packed a picnic
dinner- chicken salad (prepared at home) or tuna sandwiches, chips & salsa, pickles, crackers, etc
dessert- cinnamon biscuits, smores, hot cocoa
late night snack after swimming: shrimp & cocktail sauce, chips & salsa
breakfast- eggs, hashbrowns, peppers, cheese and salsa in tortillas, hot cocoa
lunch- ate in town

Canning Jar Banana Bread
I love banana bread... I also love canning jars. Why not combine them? These are more like large muffins than bread, but muffins are basically just little breads anyways, right? :)
I always have bananas in my freezer so I can make banana bread anytime my little heart desires.
Banana Bread in Jars
2 extra ripe bananas
1/2 c. sugar
1 egg
1 c. flour
1/2 tsp soda
1/4 c. oil
1 tsp vanilla
1/4 c. chocolate chips
Spray five 1-cup wide mouth canning jars with cooking spray. Fill each jar half full with batter. Bake at 375 for 18-25 minutes until done.

Delicious Breakfast on the Go
These were pretty much amazing! They will be worked into my menu this summer as a make ahead breakfast the kids love. I haven't tried freezing them yet, but they should freeze perfectly and I'll be doing a few extra batches soon for freezer meals. You could use bacon in place of the ham and they'd be just as good. Try these muffins! You won't be disappointed!
Pancake Muffins
2 eggs
3 c. pancake mix (I like extra fluffy)
1 1/4 c. water
1 T vegetable oil
1 c.shredded cheddar
1 c. chopped cooked ham
Mix all ingredients well. I made my batter ahead of time and had the batter in the fridge until ready to bake. Spray 12 muffin cups well and divide batter among cups. The cups will be full. Bake at 400 for 15-18 minutes until pretty and golden. Let cool for a few minutes in the pan before trying to remove. Serve with syrup to dip. I served mine with a homemade maple cream sauce and they were amazing!

Simple Pumpkin Chocolate Chip Muffins
These easy muffins only take five ingredients and they come out super moist and delicious! I don't know that there is another flavor as reminiscent of autumn as pumpkin... Make sure you enjoy them with a nice mug of hot cocoa!
Simple Pumpkin Chocolate Chip Muffins
1 box cake mix, spice cake flavor
1/4 c. flour
2/3 c. milk
1 c. pumpkin
1 c. chocolate chips
Mix all ingredients and bake in prepared muffin tin at 375 for 18-22 minutes. I like to prepare my muffin cups by lining them with cupcake papers AND spraying the papers with cooking spray so the muffins look nice and slide right out of the papers.

Pioneer Cabbage Soup & Soda Bread
We made this yummy soup for St. Patty's Day this year, but we will also use it as a simple pioneer dinner. We LOVE having pioneer themed meals (yes, we know we're odd). I made the soup in a crockpot, but for more authenticity it could also be made on the stove top. All three of my kids GOBBLED this soup up and had seconds... even Caleb who doesn't like bacon ate heartily. I was worried about the salt pork since it's mostly just fat, but it almost dissolved into the soup and was fabulous! The Irish Soda Bread is a favorite of my kids.

Cabbage Soup
1 pkg salt pork (1/2-1 lb, I'm sure bacon would work too)
carrots
potatoes
cabbage
water
Cut the salt pork into small pieces. Brown the pork in a frying pan. Place in a crockpot (drippings and all) with diced potatoes and sliced carrots. Add enough water to cover. Cook on low all day. 30 minutes before serving stir in diced cabbage and add more water if needed. I added another two cups.

Irish Soda Bread
4 c flour
1 tsp baking soda
1 tsp salt
1 to 1 ½ c buttermilk
Preheat oven to 425. Mix together dry ingredients. Gradually add buttermilk, mixing with a large spoon until dough is firm enough to be gathered into a large ball. If the dough is crumbly, add some more buttermilk, a tablespoonful at a time, until it all adheres to the ball. Place on a lightly floured board. Pat and shape it into a flat circular loaf, about 8 inches around and 1 ½ inches thick. Set on a floured baking sheet. With the tip of a knife, cut a ½ inch deep cross into the dough, dividing it into quarters. Bake for about 35-45 minutes or until the top is golden brown. Remove from the oven and wrap in a clean dish cloth. Let cool about 20 minutes.

Breakfast Apple Cake

I still have apples... I had these high hopes of doing one last canning hoorah... but alas, it didn't happen. I made an apple cake so we'd have breakfast all done in the morning. It came out really yummy and was perfect warmed up with a glass of milk!
Breakfast Apple Cake
1/2 c. milk
1 tsp lemon juice
1/4 c. butter
1 egg
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 c. sugar
1 1/2 c. flour
1 c. diced apples (1 lg apple)
Mix all ingredients together. Pour into a square baking pan sprayed with cooking spray. Sprinkle batter with cinnamon & sugar. Bake at 350 for 30 minutes or until a toothpick inserted in comes out clean.
