Breakfast Apple Cake


I still have apples... I had these high hopes of doing one last canning hoorah... but alas, it didn't happen.  I made an apple cake so we'd have breakfast all done in the morning. It came out really yummy and was perfect warmed up with a glass of milk!

Breakfast Apple Cake

1/2 c. milk
1 tsp lemon juice
1/4 c. butter
1 egg
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 c. sugar
1 1/2 c. flour
1 c. diced apples (1 lg apple)

Mix all ingredients together. Pour into a square baking pan sprayed with cooking spray. Sprinkle batter with cinnamon & sugar. Bake at 350 for 30 minutes or until a toothpick inserted in comes out clean.
