Pioneer Chicken & Dumplings

I was really scared of chicken and dumplings. I'm a Utah girl, not a southern girl. I've never tasted a dumpling and I was completely and totally creeped out by the idea! BUT I ate it and quite enjoyed it. I found a pioneer recipe for the dumplings and just made the broth the same way I do for my chicken noodle soup.

Pioneer Dumplings

3 c. flour
1 1/2 tsp salt
1 egg
1 c. milk

Stir together flour and salt. Add milk and egg. Mix until dough forms. Knead until smooth. Roll out on a floured board and cut into square dumplings... you can also roll them really thin and make pasta. Let dry while soup is being made. Drop dumplings into boiling broth. Cover. Simmer for about 20-25 minutes until done, stirring occasionally.


Amazingly I got a thumbs-up from all three kids!




Chicken Broth

chicken on bones, skin pulled off (I used leg quarters)
2 lg carrots, sliced
2 stalks celery
salt
pepper
water
4 chicken bouillon cubes
water

Fill your pot about 1/2-3/4s of the way full with water and simmer everything together until the chicken is done. Remove the chicken from the water and let cool. Pull the meat off the bones and return the bones to the broth. Continue to simmer. Strain and put half the broth into a pot and cook your dumplings in it. Before serving add the chicken meat.

I put the extra broth in canning jars to pop in my freezer. Homemade broth is much cheaper and yummier than store bought, but kind of a pain. When you're doing something like this and already doing the work it's really beneficial to double the recipe. I don't know why I said beneficial. That's not really my style of word... I think I'm getting uppity in my old age!!!

I love dumplings. Usually I only get them when my grandma visits from Texas. But a few months ago I broke down and asked her how to make them. They weren't nearly as difficult as I thought they'd be!

You are going to be so jealous. I recently inherited 700 (+/-) mason jars. lol.

In my mother's kitchen, a dumpling was always something you made with Bisquick and put in beef stew. They were not rolled out like these are in the picture but more plopped in. I have since discovered that dumplings can go into anything that is stewing, especially peaches or apples! I don't use Bisquick, but I do PLOP them right in instead of rolling them out. I think there's something tasty that happens during the PLOP.

Another way you can make them really easily is just by putting a bunch of flour into a bowl and keep adding eggs until you get the consistency you want for dough. And sometimes I don't even roll and cut mine, just break off pieces and drop them in. One thing I can tell you or your readers is be careful, you don't want to drop all of your dumplings in at one time because sometimes they will clump up together and you'll have one big dough ball in your soup! Drop them in one at a time or a couple at a time. :-) Dumplings is a normal occurrence in our house! :-)

Comfort food like dumplings always takes me back home. Watching mom make them at least once a month if not more. Very inexpensive. Very delicious! Mom was known for her dumpling s. They were the first thing people would ask her to make for a gathering. Dumplings or chicken and dressing. Soooo Good!!
