Applesauce Buttermilk Pancakes



I typically make pancakes from a mix. It's quick and easy and they always come out perfect, but occasionally I have a morning where I can take my time making breakfast. When I made these I had buttermilk and applesauce in my fridge, both needing to be used up and I happened to be out of eggs... These pancakes were the result and YUM! Fabulous... especially with homemade syrup! They're thicker than other pancakes which means they take a little longer to cook, but they were totally worth it :)

Applesauce Buttermilk Pancakes

2 c. flour
2 T. baking powder
1 tsp salt
2 c. buttermilk
1 c. applesauce
1 tsp vinegar
1/4 c. butter, melted

Mix all ingredients together. Batter will be thick. Cook on a hot greased griddle.

The recipe sounds great. My hubby is the pancake maker at our home so will have to hand this right on over to him! Be blessed. Cindy
