Whole Wheat Low Fat (but delicious) Mini Muffins
Whole Wheat Low Fat Muffins
1 c milk
1 c oats
1 tsp pumpkin pie spice
1 egg
1/4 c fat free plain yogurt
1 tsp vanilla
1/4 c applesauce
1 c whole wheat flour
1/4 c brown sugar
2 tsp baking powder
1/2 tsp salt
Preheat oven to 425. Spray your mini muffin pan with cooking spray. In a bowl, combine milk, oats and pumpkin pie spice and let sit for 5-15 minutes. In a separate bowl, combine egg, yogurt, vanilla and applesauce. Stir into milk and oats. In another bowl (I wash & dry the other one and use it again), Combine flour, sugar, baking powder and salt. Stir flour mixture into wet mixture, just until combined. Don't over mix. Spoon into prepared mini muffin cups. Bake for 12-15 minutes or until done. Serve with jam.

Yum! I am so making these this week.
I always sub applesauce for fat in recipes, but never thought to do yogurt...good idea!
Like Karalee, I never thought to add yogurt instead of oil. That sounds really neat, and they look very good.
