Sweet & Sour Pepper Relish



This is one of our favorite canning recipes!  We eat this stuff on pork chops, chicken, meatballs w/rice or right out of the jar!

Sweet & Sour Relish

8 c. chopped green peppers
6 c. chopped green apples
4 c. chopped green cabbage
2 c. banana peppers
1/4 c. salt
6 c. sugar
1/2 tsp powdered mustard
6 c. cider vinegar
1 hot red pepper (if desired)

Combine green peppers, apples, cabbage, banana peppers and salt in a large bowl.  Let sit 2 hours and drain.  Combine sugar, mustard powder and vinegar in a large stock pot.  If using a hot red pepper, cut two small slits in the pepper and add it to the vinegar mix.  Bring to a boil.  Reduce heat, add veggies and simmer 10 minutes.  Remove the hot red pepper.  Fill clean jars with hot mixture, leaving 1/4" headspace.  Process 15 minutes in a boiling water canner.  Makes about 7 pints.
