String Cheese Meatloaf


I really love meatloaf!  It's just one of those meals that makes me happy.  I paired this low fat meatloaf with squash and peas for a nice filling, healthy dinner on Sunday.  The recipe can be made with any ground meat and it doubles really well.

I've been making my meatloaf with string cheese for as long as I can remember.  It just adds a little something.  If you like to make a sauce for your meatloaf it would still work with this one.

String Cheese Meatloaf

1lb low-fat turkey burger (or any type of burger you like)
3 c. cornflakes or rice crispies
1 egg
1/4 c. ketchup
1 T worchestershire sauce
dash liquid smoke

Mix all ingredients together and pat half of the mixture into a bundt or tube pan.  Place string cheese on the meat mixture making a ring.  You can cut and piece the string cheese as much as you like to make it fit and be pretty.  Spoon the rest of the meat mixture on top and pat down.  Bake at 350 for 45 minutes or until meat is done.  Invert onto a serving platter and slice to serve.

GREAT!!! idea. I love cheese and sometimes top my meatloaf with cheese, but I like the idea of putting it in the middle.

I have never thought such a things. I am actually having meatloaf tonight. But no cheese sticks. Sniff. I will have to try and let you know. We have meatloaf 3 times a month. So, this will change it up.

what a clever idea to put cheese inside the meatloaf, I make "stuffed" hamburgers this way. Good job on the lost weigh/inches you are well on your way good job!

I may just try this the next time I make meatloaf and serve it with a maranera sauce! YUM!

I often use ground turkey for things like speghetti, sloppy joes, chili, soup because most times no one can tell I didn't use burger meat, AND my husband tends to have less heartburn. My frugal grocery store however, doesn't sell ground turkey (weird), but it isn't expensive at the larger stores. :) Great recipe!

Looks good! I've never heard of string cheese or corn flakes being used in meatloaf! Sounds good though!
