Oatmeal Fudge aka Lazy No Bake Cookies

I found this recipe for Oatmeal Fudge in a vintage "When Mormons Meet They Eat" cookbook probably from the '60s or '70s. It looked super simple. I hate dropping no bake cookies onto the wax paper because I'm lazy like that, so this worked out pretty great. I think they taste better too :)

Oatmeal Fudge

1/2 c. butter
1/2 c. cocoa
1/2 c. milk
2 c. sugar

Boil for 2 minutes. Add:

3 1/2 c. oatmeal
1 tsp vanilla
1/4 c. peanut butter (the original recipe called for 2 T)
1/2 tsp salt

Spread into a 9x13 pan sprayed with cooking spray and let set (if you're patient enough, which I'm not... I'm all about grabbing a spoon at this point lol).

That's almost the exact recipe I use for cookies we like to call Bear Turds. It doesn't have peanut butter in it though. Easy enough to just spread into a pan. Licking the pot it's cooked in is the best part IMO.

You must have peanut butter or they just don't melt in your mouth the same way. My brother will not eat them with peanut butter though. I just made some with a different recipe. More butter, less oatmeal. And can evaporated milk makes them so much better and creamier when they melt in your mouth :)

2 cup sugar
1 stick butter or margarine
1/2 cup canned milk
1 teaspoon vanilla
a huge glob of peanut butter (anywhere from
a 1/3 to 1/2 cup)
2 cups quick oats

Melt sugar, butter and milk together in a Dutch oven or large pot. Bring to a boil as slowly as you can.. Too fast and the cookies will be sugar grainy. Boil for 2 minutes. Turn off heat, add peanut butter and stir in completely. Add vanilla next (if you add it before the peanut butter you'll get a vanilla explosion :P). Stir that all in. Add the oats quickly then dump little turds on wax paper

I just made them and they're just about gone. They're so addicting. I'm 23 and I've had them since I was little bitty. My mom has the recipe on an index card my granny wrote out in the 60's or 70's. She called them "boiled cookies".

Yum :)

Growing up we called them Emergency Cookies - I guess because these are good for if you need cookies right away and don't want to wait for traditional baked cookies. I love the idea of making them into bars - anything that saves effort gets a thumbs up from me.
