First off, for those of you that don't know... coffee cake doesn't have coffee in it. LOL You eat it with coffee (or herbal tea, hot chocolate, etc. if you're like me and don't do the coffee thing.) I'm always surprised at how often I get asked if my coffee cake has coffee in it... it's a Utah thing, I guess... no-one else would be worried about it. Anyways... I had some biscuit mix in my food storage that needed to get rotated, so I worked a little magic loosely based on a vintage recipe and waa-laa! This is what I came up with. It is soooo yummy!
Banana Coffee Cake
Cake:
4 c. biscuit mix
2 ripe bananas
1/4 c. brown sugar
2 eggs
1 1/3 c. milk
1 T. lemon juice
Mix together. Pour into a greased 9x13 or two square pans.
Topping:
2/3 c. biscuit mix
1/2 c. butter
2/3 c. brown sugar
1 tsp cinnamon
Mix well, cutting up the butter until the mixture is all crumbly. Sprinkle on top of the cake batter. Bake at 400 for 30 minutes or so until done.

I once brought a nice, chocolaty coffee cake to seminary in high school, and had to call it "breakfast cake" so I wouldn't freak everyone out!
This looks like a great way to use ripe bananas. I love a good coffee cake!

I finally just got around to making this one. Yummy! A nice change from my usual banana bread or pancakes for using up overripe bananas.
