Greek Pasta Recipe


I've made this a couple of times and it is FABULOUS. The first time I made it I needed a recipe for a culture night and this was inspired by a couple of different Greek recipes I had found.  I took it to work last week and it got rave reviews. I usually simmer the sauce for a couple of hours and the flavor is great.

Greek Pasta

Simmer together covered, stirring occasionally for 20 minutes-3 hours:
1 T roasted garlic olive oil or regular olive oil and increase the garlic
5 cloves garlic
1 lg can crushed tomatoes
1 sm can kalamata olives, drained
3 T balsamic vinegar

Serve over:
1 lb pasta, cooked and drained

Top with:
mozzarella or parmesan cheese

I had never heard of soaking black olives to sub for Kalamata... I will have to try that some time - and this recipe! Looks tasty!
