Pumpkin Roll Cake and Pumpkin Bars- You have to try these!!!

I LOVE LOVE LOVE pumpkin desserts and these are so fabulouso!

Pumpkin Roll
Pumpkin rolls are really a lot simpler than you'd think and I've never had one flop. They're also a lighter holiday dessert when you use fat free cream cheese :)

cake:
3 eggs
1 c sugar
2/3 c pumpkin
3/4 c flour (I use whole wheat)
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

Beat eggs on high for 5 minutes. Gradually add sugar. Then add pumpkin. Fold in flour, baking powder, cinnamon, nutmeg and salt. Spray a jelly roll pan with cooking spray, line with wax paper and spray it again. Pour batter into prepared pan. Bake at 375 for 15 minutes.

Turn out onto a dish towel sprinkled generously with powdered sugar. Peel the wax paper off the cake.

Roll up with towel and let cool.

Filling:
1 c powdered sugar
1 pkg cream cheese, softened (I use fat free for these)
4 T butter, softened
1/2 tsp vanilla

Mix filling ingredients together. Unroll cooled cake and spread with filling. Roll back up without towel. Keep refrigerated. Slice to serve. Be prepared to guard it until you're ready for it to be served :)




Pumpkin Bars
These are the best pumpkin bars I've ever made (maybe even that I've ever tasted)! They are so yummy and of course simple, since I don't make anything but simple foods :) I could probably make these healthier, but this is one of those recipes where I don't want to... LOL They're too good.

Bars:
4 eggs
1 2/3 c sugar
1 c oil
2 c pumpkin
2 c flour (I use whole wheat)
2 tsp baking powder
2 tsp pumpkin pie spice
1 tsp salt
1 tsp baking soda
1 c chocolate chips

Preheat oven to 350. On medium speed combine eggs, sugar, oil and pumpkin until light and fluffy. Add remaining ingredients and mix until combined and batter is smooth. Spread into greased pans. I use two 8x8 square pans and they come out perfect. Bake for 30 minutes or until a toothpick inserted in comes out clean. Cool.

Icing:
1 pkg cream cheese, softened
1/2 c butter, softened
2 c powdered sugar
1 tsp vanilla

Combine cream cheese and butter. Add sugar and mix until combined. Stir in vanilla and mix well. Spread on cooled bars.

I forgot to take a picture when they were done, but here is one pan on my lap in the car on our way to our friends' house for dinner. The other pan I left home for the kids :) These really are a fantastic pumpkin bar. We're making more today to give to neighbors.
