Canning Pears with No Added Sugar




Fill a good-sized pan with unsweetened apple juice and get it simmering.

Core, peel and quarter your pears and put them in a bowl with lemon juice to keep them from browning.

As your bowl gets full, use a slotted spoon to transfer the pear quarters to the simmering apple juice.

After a moment, when the pears are warmed, put them into your hot sterilized jars and topped them with the hot apple juice. Use a spatula to get the air bubbles out, and add half a cinnamon stick to any of the pears you'd like to be cinnamon pears, seal and process.

Those are just so darn pretty! The whole sterilizing the jars thing is what keeps me from trying something like this. I've read that some people stick their jars in the dishwasher to sterilize them and use them hot out of the washer. Have you ever tried that?

I don't have a dishwasher, but when I did that was the easiest way to sterilize them. I just boil them in a big pot of water. You can actually just use your canner pot but my rack is rusty, so I have to just use other large pots of water. It doesn't take long, I just boil them while I prepare the fruit.
