Microwaved Scrambled Eggs! For Real!


My kitchen was torn up for weeks while the old flooring was ripped out, the cabinets all painted and then the new flooring put in.  My stove and fridge were in my living room for a while.  The fridge was kept plugged in, obviously, but the stove was not.  I'm a big egg eater for breakfast (well and for every meal! hehe) and not having eggs in the morning was making me sad.  I decided to experiment with scrambled eggs in the microwave and they came out perfect on the first try!  In fact, they came out so perfect I haven't made myself scrambled eggs on the stove since!  I LOVE this method!  I don't have to dirty a pan or spatula, don't have to mess with my electric stove I still haven't got the hang of yet AND the eggs come out amazingly perfect every single time!

Microwaved Scrambled Eggs

2 eggs
2 TBSP milk or water

Spray a microwave-safe both with cooking spray.  Place the eggs and milk in the bowl and beat with a fork.  Microwave on high for two minutes.  Let sit one minute.  Fluff with a fork.  Add salt, pepper or cheese if desired and enjoy!!!

I have also done four eggs in a little bit bigger bowl.  Cook four eggs and four TBSP of milk for two minutes, stir well and cook for another minute or two until set.  Fluff.

I'll have to try that. I eat eggs every morning too. A lot of times I just put an egg casserole in the crockpot (eggs and whatever else you can find in the fridge - lol) and then eat the leftovers all week.

But scrambled eggs in the microwave would make it way easier when I have breakfast burritos instead ...
