Funeral Potatoes

I know this is made just about everywhere, but here in Utah they're called Funeral Potatoes and you find them at most gatherings. I like to make funeral potatoes a day ahead of time so all I have to do is pop them in the oven on the day of the dinner. There are all sorts of versions of this dish, but I use baked potatoes in mine.

Funeral Potatoes

4 lg or 6 med potatoes, baked
1 c. sour cream
1 can cream of chicken soup
1/2 c. milk or half & half
8 oz shredded cheese
2-3 T butter

Cube the baked potatoes and place in a 9x13 pan sprayed with cooking spray. Mix together the sour cream, soup, milk and shredded cheese. Cover the potatoes with the sauce and mix lightly. If you are baking the dish right now, melt the butter and drizzle it over the top. If you are refrigerating it at this point thinly slice the butter and place it all over the top. Cover with tin foil. Bake at 350 for 30 minutes or place in fridge. When baking refrigerated potatoes, keep covered and bake at 350 for 1 hour or until hot and bubbly.
