Chocolate Mashed Potato Cake Using Instant Mashed Potatoes

I know what you're thinking... mashed potatoes in cake? But it was so good! I promise! My kids gobbled it up and I took it to work and everyone there liked it too. This makes two cakes, so eat one and have one to share or freeze.

I used instant potatoes and what better way to rotate through those potatoes you have in your food storage? Most people aren't really a fan of them (myself included).

Chocolate Mashed Potato Cake

1 c. instant mashed potato pearls or flakes
1 c. hot water
1/2 c. butter
1 c. sugar
4 eggs
1/2 c. milk
1 tsp vanilla
2 c. flour
3/4 c. cocoa
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp pumpkin pie spice

Mix potato flakes and hot water in mixing bowl. Add butter and mix well. Blend in sugar, eggs, milk and vanilla. Add remaining ingredients and mix until all blended. Pour batter into pan sprayed with cooking spray. Makes two round or square cakes. Bake at 350 for 25 minutes. Frost or dust with powdered sugar. This is a pretty dense cake, like a picnic cake and I LOVE how perfect it came out of the oven. The top was so pretty and shiny.

So, there you have it... Mashed potatoes in cake.

I've made donuts with mashed potatoes, but hadn't ever thought about putting it cake.

OK, why not? Its basically a starchy powder. And I love potato bread...

I used to despise instant mashers as a kid but I think they've come a long way since then. (Or maybe its all the cheese and bacon bits I put on them)

Thanks for stopping by my blog. This cake looks so good. Finally, a way to use potato flakes besides soup thickener. My family refuses to eat them as mashed potatoes, too.
