I LOVE carne asada fries from Betos. LOVE, LOVE, LOVE them... but they're a bit pricey (about $8) and sooo not good for you. So I thought I'd recreate them at home. They were just as good, not fried and the kids loved them. I simmered the meat for quite a while and it came out fantastic! I'm usually a want-it-now person, but these were worth the wait!
Carne Asada Fries
1 T. oil
1 lb beef stewing meat (chopped small)
1/4 c. diced onions
1/4 c. diced celery
1 can enchilada or red sauce
frozen fries
shredded cheese
other toppings as wanted:
salsa
sour cream
ketchup
guacamole
Brown the meat, onions and celery in the oil until done. Stir in the enchilada sauce, I used Walmart's red sauce. Simmer for an hour or so, I simmered for 15 minutes with the lid on and then 15 minutes with the lid off, etc... stirring each time I changed the lid. While the meat cooks, bake your fries in the oven until done. Top the fries with your delicious carne asada meat and whatever else you like. MMmmmmmm
