Easy Bean Enchiladas




Easy Bean Enchiladas

corn tortillas
oil
canned or homemade refried beans
shredded cheese
canned enchilada sauce

Heat a small amount of oil in a frying pan. Fry the tortillas one at a time for just a few seconds on each side. Sometimes the tortillas want to tear a bit. It doesn't really matter, you can't tell when they're all covered in sauce anyways. Place in a 9x13 pan. Blot the excess oil with a paper towel. Fill each tortilla with refried beans and cheese. Roll up. Top with enchilada sauce and more cheese. Bake at 400 for about 10 minutes until the beans are heated through. Serve with salsa and sour cream, if desired. Quick, easy, cheap and delicious!!!

Enjoy your conference! I always freeze cheese and it's always perfect when I need it! Love the recipe for the bean enchiladas...looks very easy!!!

I just read an article about eating 'real' veggies, which are locally grown and in-season.. it was a demonstration against the BROCCOLISATION of the vegetable isle.

Appearantly broccolisation is now a word.. :)

I've never fried my tortillas first (even though I know you're supposed to, but I'm really lazy), but I was watching "Diners, Drive-Ins and Dives" and one of the restaurant owners shows how he dips the tortilla in the enchilada sauce and THEN fries it. It looked so good that I might overcome my laziness and give it a shot.

I enjoy reading your blog.
Could you post your packing tips.
My friend is closing on a house and is overwhelmed with all of the packing process. They have the apt until Oct 1st. Their plan is to have their Townhome 2 rooms painted and the rugs steam cleaned before they move in. She said doesn't know where to start, the papers that need throwing out, the clothes that don't fit...I know she has collectibles from her travels, and photo albums, too.

Household question: Where do I start to reorganize my mother's home, she is starting to lose her memory and there is room for one person to walk by in the living room at a time; it's a ranch home. I'm afraid she may trip and fall and fracture something. Yet she is independent and asks me why I'm always trying to clean. She does not want strangers coming into the house, so hiring a cleaning lady, a no go. I work F.T. sometimes six days a week , and it's a lot to tackle. She is not computerized and has many pocket folders in totebags and in an empty dishbins
(You are not in the age category to have an elderly mother.) There are too many books, nicknacks and duplicates and triplets of shampoo, empty handi-wipe buckets. She is a product of the Great Depression, and people outside my family ( I meet at my job ) have told me that that era hold on to too much stuff, partly because they had none then. I'd be embarassed to post all of this comment. You can shorten it. There are books out there on organization, we have, but who reads all of it. She says she brings items down to donate, but there's way more to make the house comfortable to sit in.
