Jalapeno Appetizers


I've been big-time craving Jalapeno Poppers, but they're a little pricey and a lot fattening. I came up with my own that really were fantastic, super easy and a lot healthier than breaded, fried poppers! I was worried they'd be too spicy, but they were perfect! The total cost was about $2.75 for 20 appetizers.

10 jalapeno peppers
8 oz cream cheese (I use reduced fat)
1/2 c. real bacon bits
1/2 c. shredded cheese (I used a Mexican blend)

Slice each pepper in half and remove the stems, seeds and membranes. A vegetable peeler works great and you barely have to touch the insides with your hands. Drop the peppers into a pot of boiling water and boil for 2-3 minutes. Drain and run cold water over them to stop them from cooking. Mix together cream cheese, bacon and cheese. Fill each pepper half with the mixture. I made mine ahead of time, so I covered them with plastic wrap and refrigerated until I was ready to cook them. Preheat the oven to 350. Bake uncovered for 10-20 minutes or until filling is nice and warm. Enjoy!!!

Yum. There are endless variations on the wonderful little filling holder that is a jalapeno. Take a look at my Butt Burner recipe...same ingredients, different method, but you might like it.

I love jalapeno poppers! Another way to do these is to dip the creamy end in bread crumbs before you bake them, gives it that breaded look and feel without adding a ton of calories.

Mmm, I wish I had jalapenos and no morning sickness right now - I'd be all over those!!

YUM! I usually just cut and seed the jalapenos, spread on the cream cheese then wrap in bacon and put them on the grill. Your variation sounds really tastey so I'm gonna try it next time. Thanks for sharing!
