Yummy Fruit Desserts

Dessert Pizza
This is a really simple dessert or breakfast to make using any pizza crust recipe.
uncooked pizza crust (I used a homemade whole wheat crust)
1 can pie filling
cinnamon & sugar

topping:
1/2 c oats
1/4 c flour (I use whole wheat)
1/4 c brown sugar
1/2 tsp cinnamon
2 T softened butter

Icing:
4 oz cream cheese (I use fat free)
1 c powdered sugar
2 T butter
1/2 tsp vanilla

Spread the pizza crust onto a pan or stone sprinkled with cornmeal. Sprinkle the whole crust with cinnamon and sugar. Pour the pie filling over the top and spread. Mix topping ingredients together. Crumble over the top of the pie filling. Mix icing ingredients together. Drizzle over the top. Bake at 450 checking at 15 minutes. You can also bake and then top with icing if desired.


Berry Cobbler for Two

Bring to a boil in a small saucepan:

2 c frozen berries
1 tsp cornstarch
1 tsp lemon juice
2 T brown sugar
1/4 c water

Boil until berries are warm and mixture has thickened. Meanwhile, mix together in a small bowl:

1 c biscuit mix
1/4 c brown sugar
1 tsp vanilla
1/4 c milk

Pour hot berries into a small dish sprayed with cooking spray. I used a 7" round dish. Top with spoonfuls of batter. Bake at 350 for about 15 minutes or until top is golden and done.
Top with whipped cream or ice cream, grab a couple of forks and enjoy!
