Fried Ice Cream

Fried Ice Cream

Impress your friends with this one! It’s simple to make and mostly done ahead of time, which is really nice when entertaining. I used to order fried ice cream every time I'd go a Mexican restaurant and then I learned to make it myself and have never ordered it since. Our favorite flavors are chocolate chip ice cream and caramel sauce… yum yum.

1 qt ice cream, any flavor
1 c cornflake crumbs
½ c sugar
½ tsp cinnamon
Oil for frying (peanut oil smokes less)
Whipped cream
Ice cream topping

Five hours or more in advance: Combine crumbs, sugar and cinnamon in a shallow pan. Let ice cream soften for 5 or so minutes. Make 6 balls of ice cream. Roll in crumb mixture until well coated, pressing crumbs into ice cream until no ice cream is visible. Your hands will get really cold and messy. Wrap each ball in tin foil and freeze.

At serving time: Pour oil into a frying pan an inch or so deep. Heat to 450. Unwrap balls of ice cream. Using tongs roll balls one at a time in hot oil for just a couple of seconds. You basically just roll the ball in the hot oil, just letting the oil touch each part of the ball. Serve topped with whipped cream and ice cream topping.

ok so tell me.......if you never measure anything (and i know you dont!!) then how can you work out the measurements?

just curious cos i know i couldnt do that, in fact i wouldnt try for fear of killing someone!!! LOL
