Omelets... yummy!

I'm a big omelet fan. I LOVE them! They're surprisingly simple to make too.

There are so many topping combinations to choose from that your omelets can be like a completely different meal each time you make them :)



Now, I don't know that I make them "correctly", but this is how I do it.





First take two eggs and whisk them together with a bit of milk just like you would for scrambled eggs.


Pour your eggs into a small/medium frying pan sprayed with cooking spray and heated on medium. Let the eggs set for a moment. Using a rubber spatula lift the eggs and let the runny eggs slide down to the pan.


Tilt the pan as lifting your eggs to let all of the uncooked egg slide down.


Once the top of the omelet looks fairly set use your spatula to flip the whole mass.


Turn off the heat immediately and top half of the omelet with whatever you like. My flavor of the day was spinach, mozzarella cheese and green taco sauce.


Fold in half and top with more cheese, if desired. Yum!

That is exactly how I do it! :) I can't stand to feel runny eggs in my mouth. My husband doesn't like his omlette flipped, but he is wierd.
